You seem to know your shit about asian food.
I'm wanting to make a chinese recipe. These are the main ingredients:
. chicken (small bits)
. bamboo slices
. chinese shrooms
. soy sauce
. oyster sauce? (I've gotten this from yt videos doing the recipe)
Any tips I wanna emulate this dish they do in chinese restarurants over here in spain. Somehow some of them don't have it in their menu, but you ask for it and they all come with the same exact recipe 100%. Enjoyed best served with a dish of rice, so you can mix the two in your fork.

What's a good grocery store frozen fish for a flyover to get? (NOT tilapia)

They usually have stuff like flounder, cod, swai (whatever that is), salmon, whiting, and catfish. And probably some others I forgot.

How long do you guys put your chicken thighs in the oven for? I usually do 30 minutes at 400 and then flip them and put them in for another 10 minutes because I like to make sure they are fully cooked.

Also, any tips for making the skin extra crispy? I do love the crispy.

Got a preseasoned lodge here.

After each time I season it, the bottom starts getting brown patches on it after a few uses. Can't tell if the it's rusting or if it's just burnt food.
