Cured, smoked plums. Halved them, pricked the skin all over with a fine metal needle, and covered in a dry cure until the cure was liquified, then rinsed off, allowed to dry off, and cold smoked. All the plum elements are done with black amber plums, which have a really great aromatic flavor and aren't too sweet.
