Borsht.
Usually it is cooked from beetroot, but you can male one from rumex or urtica (they are gathered in the spring when they are fresh and soft).
If beetroot, it can be cooked with pig fat.
Rumex borsht is served with a boiled egg.
Both borshts are served with sour cream.
