Because as backwards as it is, Chicago is gastronomically advanced by midwest standards. They had macarons as "early" as 2011. You can now get stuff like Taiwanese gua bao and Mexican cemitas if you really hunt for them. You still can't get a decent glass of wine outside of most places, and maybe this will never happen, but it's a city that's hostile to what the local rustics consider "fancy" food which is why foreign street foods might get some traction but anyone trying to legitimately improve the food scene is destined to commit suicide out of sheer frustration at the abject barbarity of the locals and their shit taste.

Why isn't /ck/ talking about this? This only proves that the good restaurants in Chicago aren't meant for the local hayseeds, but for people visiting the town on business.
