A good quality slice of American is nothing more but processed cheddar cheese. It can't legally be called "cheese" but its still very much cheese.
Anything cheaper than that is more filler than it is cheddar, that's where you get the fucked up rubbery weird shit that's no good.
Good American cheese should melt into a cheese whiz consistency, and is perfectly acceptable for applications requiring mild, melty cheese.

My favorite cheeses are romano, aged cheddar and aged gouda
