But the point is having a really airy crust, if you make more crust and leave the dough as a regular pizza is like eating a fucking stone. The weight of the dough is the same more or less, it's just more leavened

Italy is a small country with different climate all concentrated. it has 2 mountains chain that forms a "T" shape throughout all Italy, and it's also surrounded by seas. Also it has a good climate variety which make possible grow different plants and shit

Italy was divided for hundreds between different empires. That made possible the development of very different cuisine which inevitable influence the neighbor territory

Italy incorporate every good food and dish when possible. See for example rice, it was imported from China and Italy started making their own variety. Same with tomatoes
Food also is a big part of italian culture (it was even more important in the past generations).
People like to talk about food, eating, and food is actually used as a metric to rate weddings and parties in general especially in southern italy

it depends on many factors. Neapolitan pizza is better in Napoli (which is the best style technically), but southern italy is poorer than northen italy and things obviously cost less. The same good pizza in naples could be around 4/6 euros in Napoli while in Milan would be 10/12 euros

Then it depends also on what kind of style you like more, some people argue that Roman style pizza is better which is more crunchy and thinner.

Amerilards that talk about the scarce number of styles have never been in Italy or they did the Milano-Firenze-Napoli 1 week trip. There are something like a different style for every region (not all of them) , but the most common one are the Neapolitan and the Roman styles. We also have the NY kinda style, which are what egiptians make in kebab places, they are mostly eaten when drunk or hungry at 2 AM.

In Naples there are some evolution of pizza style in these years, "canotto pizza" (pic), which is trend meant to stay (even more rised dough) and set new pizza standards.

The first thing is i notice is that your dough didn't rise properly. It looks like you waited no more than 2 hours.
