The peas start off as dried peas. You soak them over night, which makes them mush. You can get a tinned pea variety called "marrowfat " though and mush them for the same thing but that's small scale for personal use. Or get the finished product, like pic related.
Its a different texture to chips/fries, so is complentary and good for you.
