I think it's not so much about cuts but more about meat quality. We get pretty good lamb in NZ, leg, shoulder, shanks, ribs, chops, flaps, all generally pretty good.

A way to gauge it is the cold cooked fat of a piece of meat should be nice. If it's not then that's not good meat.
