Black Lave sea salt + some oil could work well. Never tried it but I would.

I cook them regularly. They grow here in Florida all the time so I can get fresh ones basically whenever I want.

I keep it frisky, different meat, different rice, different cheese, different sauce. It's fun to make, a crowd pleaser and easy as fuck.

It's also hard to fuck up, so a good starter dish for a noob.

Basically the bible belt is the best at it. N/S Carolina, Tennessee etc.

Fucking South isn't that bad ether. Mississippi, Louisiana and even Florida make solid BBQ. The only real notable exception in my opinion would be Arkansas...that entire state sucks at everything that isn't a naturally occurring hot spring.

Guys I need help with a coin toss. I was going to cook enchiladas tonight, but I came across this amazing cut of pork belly that I just had to have.

So now, the conflict, do I roll with my initial idea of the enchiladas or dive right into this pork belly and do that instead?
