I’d say we Americans don’t really have a “street food” culture as much as we should. This might be due to healthcode overmanagement but I’ve never tried to open anything to that effect so I couldn’t really say.

We have some food truck culture but I feel a distinct difference since it’s seen as novel and usually reflects this novelty in the food options. ...almost like *gulp* fair foods. Overpriced, overly salty/sweet/fatty foods with diminished enjoyment replaced by increased instagramability.

The closest I personally have access to are Mexican vendors that will post-up outside of music venues at night selling bacon-wrapped hotdogs with grilled onions and peppers. It’s the LA style hotdog and after a few pints... you can sort of look past any glaring healthcode violations and appreciate the overwhelming salty and fatty taste, writing it off as an infrequent and conditionally necessary evil.
My gf tells me stories of what international street food is and what ours should be and I feel the American street food scene is comparatively a disgrace. :/
