i like mine as rare as can be and very seldom have i encountered a place that will do blue rare. that said, my mom prefers rare and i asked her. she said:
"growing up we killed our own cows and ate them. we didn't have a reliable stove or source of fire so to us it was easier to cook them thorough as you would chicken. we didn't know that eating them with red was a good thing. while i find it odd you like a very red steak, i do enjoy what i know"

so take it as you will. I always poke fun at her but very mildly and she loves i enjoy a rare steak and asks for a piece every time
