I like shots myself, so I'll give you a list of chasers I'd use. Most work well mixing too.
Coconut milk/cream, pineapple juice, lemon/lime juice, seltzer water, pomegranate juice, strawberry juice, lemon lime soda, ginger ale, strawberry koolaid or fanta, or a Caribbean lager.
Most of those can be used as a nice base for cocktails or mixed creatively. If you're brave I bet you could use it to cook some great desserts. Banana cream pie, or some sort of banana peanut butter something.
