Maybe try importing some taco seasoning mix and corn tortillas, should be easy to find.
Not exactly authentic mexican, but taco-night is a very common meal in American families

make sure to toast the tortillas in a pan to crisp up a bit. I like the smaller sized ones like they use on the street, and I double them up so they don't tear as much.
