Would like some feedback on this thing I'm about to cook.

Ingredients:
-Bulgur-quinoa mix
-Plantain
-Eggplant
-Precooked Chicken strips (they're really good/juicy and not seasoned)

Basically I have these precooked president's choice chicken strips that are really juicy and tender. I'll make a batch of bulgur-quinoa mix with slices of plantain bananas. This last part I know is delicious but I'm wondering if there's a way to include the eggplant. Would it be good to scoop up the eggplant's flesh, cook it with the plantain in a lightly oiled pan, and then throw it all in the eggplant shell (chicken on the side as main dish?
