I make a rip-off of jian bing for breakfast all the time, using scallion pancakes (instead of trying to make one of those big ass crepes). It's quick, easy, and delicious, one of my favorite breakfasts.
Besides that, it has to a tie between Sichuan dumplings and dry-fried lamb with cumin (also a Sichuan dish).
But, I also can't pass up some good hot and sour soup or mu shu. Or crispy duck.
