First time I did a herb crust like this, came across it when looking up how to best prepare the pork, but I didn't have any of the herbs so mixed up something with the stuff I had, and it was fantastic.
The rest is a simple carrot+potato mash, and some coleslaw.
The rub:
>butter
>clove of garlic
>lemon juice
>herb de provence mix (marjoram, thyme, savory, rosemary, basil, sage, lavender)
>some extra thyme
>salt & pepper
>bit of chipotle tabasco
Mushed together in a mortar & pestle, spread on the meat that was fried in a skillet first for a few minutes, and then 8 minutes in the oven. Tasted like heaven.
