fry some in oil
that's the fundamental base of most nice savory sauces and dishes in general

you can't just use powders and sauces, you won't get anywhere

If you simply fry a decent amount of fresh aromatics, and add some nice liquid, like stock, wine, coconut cream, yogourt, anything really, you'll get a nice sauce with body. spices can take it further, they're the next piece of the puzzle.

If you just add spices to a liquid you'll probably get something sharp and kind of nasty.

Go and buy some fresh onion and garlic and ginger. Those things are all also extremely good for you, and keep well.

In NZ all cattle is grass fed free range

and free range chicken/ eggs taste significantly better and are worth paying for on taste alone

and pigs are so smart that i like to buy free range pork when i can to help them out but i'll eat pork at chinese restaurants sometimes which isn't.

If you're going to grill it, then grill some vegetables at the same time.
Just cut them large, try to cut flat surfaces on them (broccoli florets down the middle), wash, and thoroughly toss them with oil, salt and pepper. Dress with lemon juice and fresh herbs.

Maybe try trad jap sides as well, so, rice, and pickles. Homemade quick pickles are easy. Just mandolin or thinly slice vegetables (cucumber, radish, etc). Then boil 1:1 water and rice wine vinegar, with some salt and sugar, and pour over the vegetables for atleast an hour, then drain. Add fresh chilli if you want them spicy.

Roast bell pepper salad is a great side. Wash bell peppers, then bake or grill, turning, no oil, until the skin is blackened and loose but the flesh hasn't dried out (around 20 mins). Put them in paper bags and the skin will steam off. Peel the skin and de-seed. Don't wash or you'll lose smoky flavour. Marinade in olive oil, lemon juice/vinegar, salt, pepper, minced fresh garlic and basil or parsley

Maangachi's spinach side dish is great and add toasted sesame seeds & sesame oil.

Chinese smashed cucumber is a nice interesting side which is still refreshing.
