Gyoza have very thin dough, very different filling since it's Asian cuisine and they are fried. Pierogi are boiled and can be additionally fried if you like them that way. This is how they look without being fried.
If they are savoury (white cheese and potato, cabbage with mushrooms or whatever) then sauteed onions are a popular topping.
