for the schnitzel
>pound thin cut pork chops flat with a meat mallet
>season with salt and pepper
>coat, in order, with flour, beaten egg, and unflavored bread crumbs
>fry for a couple minutes on each side in oil or lard
>set on paper towel plate to drain
gravy
>sautee half an onion in butter or lard
>add sliced mushrooms, add salt and pepper and cook until they loose much moisture
>add a little more butter and a some flour
>once the flour is golden deglaze the pan with a cup of schwarzbier
>add around 2 cups of beef stock and simmer until thickened
>some people add cream too but i personally dont care for cream in gravy
you can also serve the schnitzels plain or Holsteiner style:
>on plain schnitzel top with a fried egg, capers and anchovies
also, is use the same gravy recipe for bangers and mash but substitute guiness for the schwarzbier

For the meat:

>dip in white flour, then beaten egg, then unflavored bread crumbs
>fry for a couple minutes on each side in vegetable oil (heated to about medium/medium high), test first by dipping the edge of the cutlet in the oil. if it sizzles your good
>remove and drain on a paper towel plate
For the sauce
>sautee half and onion in butter or lard until sweating
>add sliced white or brown mushrooms and cook until much of the liquid is cooked out
>deglaze with about a cup of a dark beer like pic related and add a little flour to thicken
>add a cup or two of beef stock
>cook until reduced and thick, seasoning with salt and pepper to taste
>serve hot
you can of course serve them plain or in a variety of other styles, one of my favorites is what the Germans call Holsteiner style
>plain schnitzel as above, no gravy or sauce
>top with fried egg over medium
>top with anchovies and capers

and >>13884915 in addition to Germany (we basically built ours off of the Germans) but most of the rest of the world is fairly obscure.
