i suggest 2 things
a; toast your sesame seeds. you can do it in the oven or in a pan, dry, be careful not to burn them, turn them a bit, but take them as brown as you can before they burn. Buy them bulk and do a big jar worth.

They're way tastier toasted.

b; use jasmine rice and get it stickier than that for asian food. That rice does not match your chicken.

should I blend the pineapple into the sauce, simmer it for the whole time, or add it fresh at the end? Or a combination

I also have the usuals; coconut cream, chicken thighs, kaffir lime leaf, ginger, garlic, fish sauce, limes, fresh turmeric, lemongrass, palm sugar, etc to put in as well

absolute best fish is fresh, whole, and steamed chinese style
that's the way that most lets the fish itself shine
