I went to a sushi restaurant recently. It was an "upscale" one if that matters. One of the diners (some old white guy) flipped out when he discovered the head chef wasn't Japanese. My question is this: does the ethnicity of the chef matter when you dine at an "ethnic" restaurant? Like would you think less of your sushi if it wasn't made by a 100% pure nihonjin?
