i live in japan and i can say that a lot of foods are simply not the same in the west. examples being tempura and udon for example. theyre so simple yet nobody in america makes their own udon in house. im sure someone does but ive never seen it. tempura, i have no clue what they do here that makes it so good but there is no similarity to the tempura here in any other country. this sounds idiotic given that it is just fried items, but if you came here you would understand.
other than that, the best thing about japanese food really is just the ingredients. japanese food is really simple and the credit really goes to the ingredients rather than the cuisine or recipes themselves. japanese food is bland in general so the ingredients have to be high quality otherwise the food will taste like shit.
