I'm making a big ass pot of bolognese but I'm getting pretty tired and want to go to bed. it still has another half hour before it's done in the oven. can I throw the whole pot into the fridge and go to bed, or am I going to excessively expose the sauce, or the rest of my fridge, to dangerous temperatures?
