Once the beef cuff meat is tender, start to add in the jalapenos, you add about 1/3 each time, then stir fry it till the japapeno gives out its liquid and softens

the idea is to you end up with a pot of jalapenos with various degrees of disintegration. The jalapenos added first will become the body of the stew while the rest will give the stew its body.

You can, if you prefer,, to keep stewing until all the jalapeno turns into a mush. But I prefer some bite.
