Love using the beet juice for colouring.
You can add some to the water when boiling potatoes too. Works best if they're peeled first obviously.
Beets really don't get as much love as they deserve. They have such a nice blend of sweetness and earthiness.

Good for you. Hydration is important, although you should not force yourself to drink more than you want to if you're a somewhat young and healthy person otherwise. That whole thing about the eight glasses is very iffy.
