post partum depression hit mom hard. she stayed cooped in her room for most of the day. dad couldn't help because he was working long hours to keep us all afloat. so on weekends and school breaks, 2nd grade me, and my older brother, were on our own. too young to cook for ourselves. But we had a microwave, and a can opener, and that meant we had chef boyardee. i remember afternoons of dragging a heavy chair to the kitchen, standing on it to reach the overhead microwave. the scent of that red sauce, the stains it left. was it healthy? Probably not. did it taste good? not consistently. but it was cheap and accessible, it was grain and salt and protein that kept me from childhold malnutrition. So, Thank you, Hector.
