Nothing ever goes to plan yo - plenty of ways to fuck it up even when follwing a recipe to the letter. Not all cookers are equal. A recipe only tells you the method and ingeredients - spotting that something is going wrong (lets say, your omlette is cooking unevenly) takes experience.

I can cook many dishes blindfolded now, but thats taken years of fuckups and asking for help to get there - just like any skill. See also: just because you can read a carpentry book doesn't mean you can lay a wooden floor in a house. Plenty of unforseen problems.
