I was going to post it in my first post..
Don't worry about the shitpoasters and Flame8oTs, there are more lurkers than you know who appreciate these threads. I've seen around 8 or 9 of Opie's now, and they are all basic cooking, with solid technique.
Keep in mind there are groups ACTIVELY working to make these boards all shitty and repellant.
Don't give up, Ignore the trolls, and have fun doing what you do.

both work--baking soda is fast and dirty if you want that "Dragon Express/Golden Bowl/Great Wall" takeout/buffet flavor.
Velveting with cornstarch requires eggwhites and a few other ingredients, but you'll get a slightly higher quality end result.
