I don't make it the traditional way (whole leaf) because I like chunks and don't want to cut it every time so I make it the same way I make sauerkraut: layering salt and cabbage. My pepper flakes are also ancient so it doesn't look as vibrant as the last time I made it (probably over a year ago) but it still tasted good. Will probably use much more pepper flakes in the next batch because it needed more.
