For those who have tried it, how would you describe the taste and texture ofbeef tongue? I imagine it would be similar to tenderloin. I ask because I am not a fan of tender cuts of meat. I prefer my meat to have some bite to it like sirloin.

got a huge big tongue (about 2kg/4lbs). never had it before but seen some webms of it being prepared on here and decided to try. i've heard a part of it is more tender and the other tougher. so i'm thinking yakitori style thinly sliced on the tender part and slowcooking for the tougher. thoughts? also what to use for the slowcooking? tacos maybe?
