It's not as fickle as you expect.
Just don't put water in it. In fact, dry off the potatoes with a paper towel before adding them in.

My dad likes to simmer them in a cast iron pot all afternoon instead of grilling them. Especially in Winter.
The meat is definitely falling off the bone and the gravy is amazing.
We're Danish, if you were wondering.
