Comté.

Not the tastiest cheese, but the only cheese I keeep myself stocked with all the time.
The quality is always there (government guaranteed), the taste is always good, it's easy to keep it, and it goes well in pasta as well as gratins and a lot of other dishes.

These days it's walnuts season and I'm enjoying pic related.
