I'm starting to lean towards him just trolling.
He's out traveling, the camera crew picks him up for an afternoon, puts random ingredients in front of him, tells him to make something, spend 30 minutes recording, and done - upload to youtube.
No reshoots.
No coherent ingredient list.
No coherent steps, everything is in random order.
No script.
No taste test.
No kitchen equipment, just a flame.
They'll make sure to get incredibly local stuff so nobody would be able to actually recreate the recipe. An open flame also covers it because of how likely you are ruining your food on it.

Maybe its just an effort to keep his youtube business going with incredibly low effort content now that his TV and Restaurants have taken a big hit.
