From what I know (and correct me if I'm wrong) a lot of the restrictive OT laws were put in place to remind the Israelites that they are separate from the Canaanite. Which is why they're not allowed to mix fabrics, not allowed to mix parents and children in food (so no chicken with egg, no beef boiled in milk) and they're only allowed to eat food that either has both a cloven hoof and chews the cud or has neither of these two. Hence pig (cloven hoof, chews the cud) being non-kosher, camel too. But cows (cloven hoof, chews the cud) or horse (uncloven hoof, doesn't chew the cud) are fine. I am going to guess shellfish falls in the "swims but has legs" category and is therefore not "separated" (things with legs on land, things with fish in the water).

Of course all of that completely lost its meaning after the Romans destroyed the Second Temple, Judaism became defunct and the Old Covenant was replaced with the New, in which Jesus did away with dietary restrictions in general
