Why is there such an autistic reaction to sous vide? It's a pretty cool talking point, it is very easy, anyone can do it, it give you an excuse to use a flame thrower to finish a steak which is fun too.

I have come into possession of dry-aged ribeye, 1.5".
Tell me how to prepare this without using the oven, stovetop only. I've never handled dry-aged before and I'm not sure if it's too different from preparing normal store-bought steaks.
