Hey, I do this too. It's closer to 50% though. Usually 50% white wheat, 30% whole wheat, 10% whole spelt and 10% rye (mostly from the sourdough). Seems this wasn't a imagined sweet spot. Pic related.

Baking steels are amazing if not using a dutch oven. Managed to make my own for less than 20$ rather than buy it for ~70$. Glad I didn't settle for a cheaper stone.
