>decide I want a baked potato for lunch
>mom uses the microwave so I copy what she does for it
>clean potato, wrap it in damp paper towel, pop that sucker in for about 8-10 minutes
>go sit at my desktop
>time slips buy
>suddenly smell smoke
>look over at the microwave
>it's flaming up Wizard of Oz style
>making whirring and flame sounds like it's gonna detonate a bomb
>too scared to go near the thing to turn it off and take out the potadur

>call my dad like I'm being murdered
>rushes up from the basement and sees the melting microwave
>he looks at me like I've kicked the family dog
>grabs oven mitts
>beats out the flames
>takes out the now charred potato
>"HERE, HOT POTATO!"
>tossed the fucking potato into my hands
>scorched my hands
>throw it into the kitchen sink
>the potato crumbles into ash minutes later

As for meat, I'm on a budget. What kind of meat and cook/recipe for that would you suggest?
As for specialties, in what area do you mean as far as cooking goes? As far as desert I would prefer something that wouldn't have to do with baking because his birthday wasn't too long ago and I baked that lucky son of a bitch 3 personal cakes for separate occasions and a half dozen cupcakes to accompany one of those cakes. I've job shadowed at a bakery before and learned how to make cake pops so that seems moot. He hates fruit so chocolate strawberries don't work. He eats like the pickiest fucking 3 year old. No veggies or fruit, hates sweets, and loves seafood (like cooked fish). Not sure how to make any of that into a desert that stays relatively cheap :c

So, the recipe calls for things I can't afford/don't know how to cook. Is there any way of substituting or eliminating them?
Its saying I need butter (got that), mushrooms (I can handle these, not too hard), brandy, vermouth, or wine(unavailable to me at my age), Chicken Stock (I'd prefer to use the bouillon since I know I have that in the cupboards), shallots or onion (what's the trade off? Otherwise I'll just get an onion), arborio rice (check), Parmesan cheese (check) Salt and freshly ground black pepper (check).
The marinated grilled chicken breast sounds like it would cost more than it would to gather the ingredients for the risotto and it would suit neither of our tastes I'm sorry to say.
As far as the wine thing goes for the risotto, there's really no way around that for me. I've got about $25 at most to spend to make what I'm trying work.
