Actual Chicago resident here. There are actually two varieties of Chicago style pizza: Deep dish and stuffed.

Deep dish (from the bottom up):

Thick crunchy crust
Cheese
Toppings
Sauce
Dusting of parmesan

Stuffed (also from the bottom up):

Slightly thinner crust
Cheese
Toppings
Very thin crust
Sauce
Dusting of parmesan

Pequod's makes the best deep dish, followed by Lou Malnati's. Giordano's is stuffed. Also deep dish/stuffed is a meme dish that you eat a few times a year and the vast majority of non-chain pizzerias serve a thin, crunchy crust cut into squares which is the real "Chicago-style" AKA tavern pizza.
