It depends on where you were. Arkansas isn't NJ or MA, it's big enough that there are regional differences. Ozark cooking is not like Delta cooking and a few towns are big/cosmopolitan enough that there's legitimately edible ethnic cuisine, rarely really good but often decent. Frankly, northwest Arkansas is a hub of Latin American food, the immigrant labor at the big chicken processing plants there has spawned a lot of great restaurants.

You have to find the right places and that usually means not going to the places the churchies are all going to. They love flavorless bullshit that reminds them of the crap their mothers cooked for them. But there are hidden gems, some really superb bbq, some of the best catfish and hushpuppies in the South, wonderful local venison and goat and the very best biscuits & gravy I have ever had.

Sure, Arkansas is easy to make fun of. There are a lot of ignorant, uneducated people who cling to their faith and their guns and love green bean casserole made from canned green beans, canned mushroom soup and canned fried onion strings. But there are people who care about food and care about making it right so you can take your own ignorance and stuff a turkey with it.
