Ja/ck/ has evolved into the perfect eating machine. His brain is unusually small, hence the top of his cranium is small. He doesn't use his brain very much but uses his gaping mouth a lot. That's why the bottom half of his head is larger.

I like how in some videos Jack pretends to talk to people "behind the scenes" like saying his "camera man" is laughing knowing there is no one there. He did it quite a bit when he was trying to get on food network by making his show seem bigger and more professional. It's pretty damn pathetic but funny.
