Collard greens are very mild tasting. They can be prepared in any number of ways, and are very nutritious, like kale.

I use them as a base for a hearty vegetable soup seasoned with a smoked protein. You can use anything from smoked turkey, to bacon, ham, or go old school and use ham hocks.

They were popular in the south back in the day because they grew for most of the year, and were very cheap to buy.

Canned collareds are o.k.., but they're better when you buy them fresh and make them yourself.

This is a soup I made with collards, peppers, onion, chicken broth and ham as the protein. You can do the same and just sub chicken meat, or leave out the protein entirely.

Regardless, shitty northern "soul food" is what gave people a bad impression about healthy staples, like collard greens, that don't have to be made using smoked meats or any kind of fats. Today, most "soul food" places are still piling on the fats and salts because people think that's the way it's supposed to be.....it's not.
