You absolutely can, but you'll have to go to the deli in the grocery store and usually pay a little bit more, but not always.
There was a place in Bloomington, Indiana that sold fried bologna sandwiches ONLY. It shut down 20 years ago, but there would be a line out the door for an hour every lunchtime.
I can't remember the name, and never got to eat there, but people swore by it until the one guy who ran the place retired.
