The best lasagna has a lot of cheese, ricotta. The lamer lasagna just has meat sauce and is topped with mozz.

This is true, also pasta that has huge pieces of meat like shrimp is also fine

Otherwise pasta is only fitting as a side for something like chicken or veal

i have 2 questions regarding chicken lasagna

so i made some and i cooked the chicken in a pan and then layered it with the other stuff and baked it for about 45 minutes.

my question is how does the chicken not over-cook during the baking? it was just as i got it out of the pan.

my other question is can i just layer in raw chicken pieces and bake it and then they come out cooked? or will they be raw?

Any ideas for changing my lasagna's cheese mix a bit? I usually make a mixture of ricotta (obviously) and mozzarella + Parmesan. But I was thinking of trying ricotta, mozerella + some sort of meme cheese. Like Gouda or... something.

I already add a 3 finger pinch of nutmeg to it.

Also any general lasagna stuff is welcome.
