I'm getting ready to deep fry some chicken. I have it marinated in buttermilk and hot sauce, so it should be pretty good.

After I'm done cooking the chicken, what should I do with the leftover oil? I was thinking of dumping it down the drain since it's not my problem, but what do you guys suggest?
