TLDR: It's a recently invented New Year "tradition" for good luck, symbolized by the coin (prosperity). The article says they were endorsed by famous e-celeb chef Jacques Pepe (the Babish of his day), but /ck/ probably adopted them more because:

Some people keep the pigs from former years until they are black, desiccated, and moldy, presumably with wizard powers (picrel, not mine). Last year, notably, an underage newfag janny on crack DELETED the NYE lemon pig thread, which would be the equivalent stupidity of deleting the annual Sir comic on /fit/ (instead, it should have been stickied). But this act of gayness has apparently only strengthened the pigfrens' resolve for 2024.
