When I make affogato I treat it as a dessert.

I use pic related as a glass (which coincidentally I have as drinking glasses in my kitchen because why not?), fill it with ice cream for 3/4 and then I put it under the espresso machine pouring coffee directly on it. I don't care how much coffee I make, I never measured, it just need to submerge all the ice cream while leaving the top of it exposed like an iceberg.

Then I feast.
