kek. just cooked this tonight and was gonna make a thread, but searched the catalog.

I went the safe route and did a fancy mac & cheese plus lobster tail under my oven broiler's flame on high for 5-7 minutes, basting with butter twice. ie: lobster mac and cheese.

I have to say, what a spiny mother fucker. seafood shears made opening it up pretty easy, but getting the poop vein out was no fun. plus the fucker overcooks in like 12 seconds so I had half tough meat, half translucent gray meat. I'm definitely doing tails for ~135 in the sous vide next round.
