What brands should I be looking at?

Ever since I moved out I've had to use a fucking paring knife. I mentioned hating it and got an 8 inch chef's knife for Christmas. It's made things a bit easier but I still can't go very fast or precise with it. Please impart upon me the knowledge to properly mince, chop, slice, and dice like a pro.

Hey /ck/, are there any chefs that frequent this board? are there any boards or such online of professional chefs, I'm an industrial design student and I want to do surveys of chefs to further a project, but need to find a sample of that demographic

My awesome aunt got me a Henckel chef's knife for my birthday last week, it cuts through EVERYTHING like goddamned butter.
