You peel it off the bone, what you never ate a fried or baked whole trout before?

You can, with a little practice, just life the meat off the one side and then lift the spine, head, and fins off the bottom and there go all the bones. Thankfully city slickers are afraid of it mostly so the beautiful fish are left alone.
