that doesn't really make sense to me. Aren't most carb-rich foods relatively very new to humans? I.e. they were hardly edible for millions of years of evolution, but due to intense selective breeding and genetic manipulation over the last thousand years, they became nutritionally significant. We've eaten a mostly animal based diet for hundreds of thousands of years simply because most plants would have been both highly seasonal and calorifically insignificant. Seems like we must be adapted to eating fat and protein, and not many carbs.
